What is the difference between Japanese tea and Chinese tea?

Tea brewing of Japanese tea and Chinese tea

Delicious Japanese Green Tea Brewing

1. Add hot water to the Yunomi teacup.

Put hot water in the Yunomi teacup in advance, and warm the teacup while cooling the hot water a little. By this way you can measure the appropriate amount of hot water for brewing green tea.

  • Soft water is suitable for brewing green tea.
  • The amount of hot water is about 60ml
  • The temperature of the hot water of sencha is about 70-90 ℃.
  • The temperature of the hot water of Gyokuro green tea is about 50-60 ℃.

The point is that the higher the quality of green tea, the slower and slower the tea brewing.

2. Put green tea leaves in the Kyusu teapot.

About 2-4g for one person. For 5 or more people, use about 2g per person as a guide.

* Adjust the number of green tea leaves according to the strength of your favorite green tea.

3. Pour Yunomi teacup hot water into the Kyusu teapot and wait for a while.

Wait about 1 minute for the green tea leaves to open and the taste of green tea to be extracted.

4. Pour the green tea little by little so that the taste and amount are even.

Pour firmly to the last drop.

Chinese Tea Brewing

1. Pour hot water into a teapot or teacup to warm them up and then discard the hot water.

2. Put the tea leaves in a teapot and pour boiling water.

For black tea, immediately discard the hot water (to wash the tea leaves) and pour boiling water again.

3. Pour hot water from above and cover to steam for 1-2 minutes.

Chinese tea has a wide variety of tea leaves and is said to be in the hundreds or thousands. There are 6 types of tea, “green tea, white tea, yellow tea, blue tea, black tea, and black tea” just by dividing them according to the degree of fermentation. Therefore, there are many ways to brew, and there is no fixed method.

Japanese tea emphasizes taste, and Chinese tea emphasizes aroma.

History of Japanese green tea

Japanese tea began in 1191 with tea tree seeds that are said to have been brought back from Zhejiang Province, China by Eisai Zen Master.

After that, Japanese tea made by sowing tea tree seeds in Fukase, Kabuo, became the foundation of what is now called Uji tea (Kyoto). This is the beginning of matcha, which is now world-famous.

Eisai Zen Master endeavored to popularize green tea and spread it to the samurai society, which was only drunk in aristocratic society. After that, green tea created and spread a unique culture called tea ceremony from the connection with the Zen Buddhism. It wasn’t until 1601 that Sencha Green Tea became a drink for everyday tea, as it is today.

What are the health benefits of green tea?

Both Japanese and Chinese teas have long been considered to have a positive effect on the body. This is because “catechin” and “caffeine”, which are rarely found in other places, can be easily melted in hot water and drunk as tea.

“Catechin” is a bitter and astringent ingredient of tea.It can be expected to have a positive effect on antioxidant activity, prevention of hypertension and obesity, antibacterial/bactericidal activity, and antiviral activity.

“Caffeine” is a light bitter ingredient. It can be expected to have a positive effect on hangovers because it has a wake-up effect and enhances alcohol metabolism.

“Theanine” is an amino acid and a delicious ingredient of tea and has a relaxing effect.

Catechin, caffeine, and theanine are all abundant in the youngest shoots of tea. Drink green tea with your daily diet and live a healthy life easily.

What is organically cultivated green tea?

Green tea leaves are prone to insects, and pesticide-free cultivation is very difficult and time-consuming. It is said that the use of chemical fertilizers makes the taste of green tea lighter and the taste loses its depth. Even with the same green tea, the taste of green tea changes greatly depending on how it is grown and the fertilizer is used.

Green tea leaves are processed as they are without being washed after being picked from the field, so they contain more pesticides than other vegetables.

Tokyo Tea Garden’s green tea is a safe and secure Japanese organic green tea that has been cultivated with a careful cultivation method and the power of nature, using a cultivation method that does not rely on pesticides.
